Everything Rose: Its Origin, Taste, Benefits and Uses

Rose, an ingredient that embodies luxury, romance and tradition in the kitchen. As a culinary ingredient, rose transforms dishes with its delicate floral elegance. Rose petals, rosewater, rose syrup, and preserves bring a signature perfume to sweets, beverages, and some savory recipes worldwide. Roseโ€™s timeless allure and continued global demand also stems from its romantic nature and versatile edible flowers.

Origin and History

Rose is believed to have originated in Asia, with cultivation in China dating back around 5,000 years. They were prized in ancient Persia (modern day Iran), where distillation of rose petals into rosewater began thousands of years ago. Today, Persia remains a top producer globally. From Persia, it spread via trade and conquest to the Middle East, India, the Mediterranean, and Europe. The spreading led to the ingredient having different names in different regions. For instance, Golab in Persian/Iranian, Ward in Arabic, gulab in Hindi/Urdu, Gul suyu in Turkish, Eau de rose in French, and rosewater in English. Historically, ancient Egyptians, Greeks, and Romans used roses in perfumes, medicines, wines, and banquets. In the Middle Ages, rosewater flavored everything from meats to desserts in Persian, Arab, and European cuisines. Damask roses (Rosa damascene) were/are especially valued for their intense alluring fragrance.

Taste Profile

Culinary roses deliver a delicate, sweet-floral flavor with subtle fruity (green apple, citrus), honeyed, and sometimes slightly tart or peppery notes. The aromatic profile may also deliver a naturally bitter finish taste depending on the preparation method. When used correctly, the aroma is more prominent than the taste without being overpowering. Fresh petals can be mildly herbaceous or tart while rosewater provides a cleaner, distilled essence. Some rose varieties such as Damask are deeper and honey-like, while others may be lighter and greener. For effective achievement of taste and profile in food and beverages, roses should be used sparingly to avoid a soapy taste.

Health Benefits

Scientifically, research indicates that rose contains essential properties that are beneficial to consumer health. Roses are rich in polyphenols, flavonoids, anthocyanins, vitamin C, and antioxidants. Research on rose extracts, tea, and water supports several benefits. The high phenolic content in rose helps combat oxidative stress and reduce inflammation markers hence antioxidant and anti-inflammatory benefits. Roses also act as a carminative agent that expels gas from the digestive tract to prevent bloating. Similarly, roses are also beneficial in reducing stomach cramps, and menstrual pain relief due to its antispasmodic compounds.

Uses in Various Cultures

Different cultures adopted roses for various uses. However, conventionally, most uses of roses are common especially in culinary arts to spice savory dishes. Roses, especially petals, are used in making beverages, particularly tea, given its tea-like taste that pairs adequately with dairy products and spices like cardamon. In communities such as India and South Asia regions, rose is used in making digestive tonic that reduces stomach bloats and enhances breaking down of food. In Europe and Mediterranean cultures, rose oil extracts, due to its intense floral notes, was also used in baking, making confectioneries, jams, syrups and flavor sweets.
